Step 1
In a bowl, whisk together the cream cheese and icing sugar until smooth and fully combined. Line a tray with parchment paper and transfer the mixture to a piping bag. Pipe the cream cheese mixture into nine 1 inch circles. Transfer the tray to the freezer.
Step 2
Place the strawberries in a bowl and place in the freezer as well.
Step 3
In the bowl of a stand mixer with the paddle attachment, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Step 4
Add the egg and beat well for about 5 minutes or until light.
Step 5
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Add the dry ingredients to the butter mixture and mix until just combined.
Step 6
Coat the frozen strawberries with about 1/2 tablespoon flour.
Step 7
Gently fold in the white chocolate chunks and frozen strawberries. Be careful not to overmix as the strawberries may release excess moisture.
Step 8
Scoop the dough into nine golf ball-sized portions (2 to 3 tablespoons). Place the frozen cream cheese mixture on top of each cookie dough ball, gently pressing it down to adhere.
Step 9
Chill the cookies in the fridge for at least 2 hours.
Step 10
Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
Step 11
Once the cookies are chilled, bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Step 12
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes.

Transfer them to a wire rack to cool completely and enjoy!
