Make sure to use fresh mussels for this recipe – it really makes a difference! Before you start cooking, add them to a large bowl and fill with water, lots of ice, and a hefty pinch of salt. I let them sit in the icy water for at least 15 minutes. Give them a few rinses to get rid of any sandy bits. The mussels should be tightly closed, so discard any cracked or open mussels. A quick tip is to give it a tap; if it doesn’t close shortly after that, toss it out.

Step 1
Heat olive oil in a pan over medium heat.
Step 2
Add diced onions and sauté until translucent.
Step 3
Add garlic, chorizo, and half of the chopped parsley, and sauté for 5 minutes until the chorizo is slightly browned.
Step 4
Pour in the beer and add the butter, cooking for an additional 2 minutes until the butter melts and the mixture is well combined.
Step 5
Add the mussels to the pan, stirring them into the sauce. Cover the pan and cook until the mussels open, about 3-5 minutes.
Step 6
Garnish with the remaining parsley before serving.
