Peanut Butter Udon

I've never been a big fan of peanut butter, yet these saucy noodles are my favourite go-to lunch.
This spicy, rich noodle is ready in 15 minutes and it's packed with flavour. You can adjust the sauce to your taste and customize the vegetables in this recipe.
I used pre-cooked udon noodles, which you can find vacuum-packed in plastic in any grocery store. Just make sure that while you boil them, do not overcook or they will turn mushy.
If by any chance you can't find udon noodles, you can basically use any other noodles that you have on hand.

Step 1
To make the sauce, add all the ingredients to a medium bowl. Whisk until smooth and add more water if necessary.
Step 2
Cook the noodles according to the package directions.
Step 3
Drain the noodles and add to the sauce along with carrot and edamame. Toss until mixed well.
Step 4
Transfer the noodles to a serving bowl. Top with green onion and sesame seeds. Enjoy!
