Cajun Popcorn Shrimp

From start to finish, making this crunchy, savoury seafood dish will only take you 30 minutes tops. It is quite frankly tough to mess up this dish and though it involves deep frying, you should not feel intimated. All you have to do is peel and devein, dip in egg mixture, coat in flour and fry for a few minutes until golden brown and shrimp curls. Suppose you are unsure about doneness, pop a single shrimp out and cut it in half. Cajun popcorn shrimp is so good that I have it on its own with a squeeze of lemon and spicy lime mayo, with a side of fries, rice or you can even use this to make delicious tacos!

Cajun Popcorn Shrimp

Step 1
In a medium bowl, add flour, 3 teaspoons cajun seasoning and salt. Mix well.
Step 2
Pour half of the flour mixture into a large Ziploc bag, reserve the rest.
Step 3
Add the shrimp to the bag and shake until each shrimp is coated with flour. Shake off any excess flour.
Step 4
In a small bowl, add egg, milk and 1 teaspoon cajun seasoning. Mix well.
Step 5
Dredge the floured shrimp in the egg mixture, then coat with the reserved seasoned flour mixture from the large bowl.
Step 6
Heat neutral oil in a heavy-bottomed pot to 350°F.
Step 7
Fry shrimp for a few minutes until golden brown and cooked through. Remove onto a paper towel-lined plate and sprinkle with salt.
Spicy Lime Mayo

Mix all ingredients together in a small bowl. Serve with shrimp.
