Raspberry Clafoutis

Clafoutis is a classic French dessert that's made of fresh fruits and custard. Cherries are the typical fruit used in clafoutis, but I swapped it with raspberries to get more tart flavor. Pistachio is also used here to bring some crunch to this recipe.
Clafoutis is probably one of the easiest recipes that you can make at home. You can use this recipe with almost any other fruit that you have in your hand. Blueberry, peach and apricot could be amazing substitutes.
You can serve the clafoutis warm with ice cream, fresh whipped cream or just as it is with some icing sugar on top.

Step 1
Preheat the oven to 375°F and butter a 9-inch baking dish.
Step 2
In a large bowl, whisk the eggs and sugar together until fully combined.
Step 3
Whisk in the milk, heavy cream and vanilla extract. Add flour and salt, whisk for another 2 minutes until everything is mixed well.
Step 4
Place the raspberries on the baking dish and pour the batter over the raspberries.
Step 5
Sprinkle the top with pistachio. Bake in the oven for 40 minutes or until the clafoutis is set and golden.
Step 6
Let cool slightly. Dust with icing sugar and garnish with mint leaves if using.
