I’m pretty sure most of us are obsessed with almond croissants, so why not turn some of our favourite things into loaf cakes? This almond croissant loaf cake has the best texture thanks to the addition of Khaas plain yogurt from Wholesale Club. Yogurt is such a great addition to baked goods as it keeps the crumb moist, fluffy, and rich. The almond butter filling adds a perfectly nutty flavour, making each bite so indulgent. To top it all off, honey-coated slivered almonds get nice and toasty in the oven, bringing all the flavours together in true almond croissant fashion. This cake is packed with comforting and familiar flavours that I know you’ll love!

Almond Croissant Loaf Cake

Step 1
Preheat the oven to 325°F.
Step 2
In a bowl, combine all-purpose flour, almond flour, baking powder, and baking soda.
Step 3
In a separate bowl, whisk together melted butter and sugar. Add yogurt, milk, 2 teaspoons almond extract, and eggs. Mix until well combined.
Step 4
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 5
In another bowl, mix almond butter and 2 teaspoons almond extract. If needed, add a bit of milk to thin it out.
Step 6
Pour half of the batter into a greased loaf pan. Add the almond butter mixture and swirl through the batter. Pour the remaining batter on top.
Step 7
In a separate bowl, coat the slivered almonds in honey.
Step 8
Sprinkle the honey-coated almonds on top of the batter.
Step 9
Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Step 10
Let cool. Dust with powdered sugar before serving.
