One of the world’s rarest ingredients, truffles are revered for their aroma, their flavour and for the way they transform any meal into a moment to remember. On the menu, guests will find four courses, each paired with an expression of Cambridge Gin, served neat and in an exclusive cocktail. Guests at the event will also be the first to taste Cambridge Distillery’s Truffle Gin before its North American launch later this month. William Lowe, Master Distiller and Master of Wine, will be on hand to host the special celebration.
To begin, the team will be serving Scallop Crudo with summer truffle, passionfruit aguachile, grapes and pickled sea asparagus. Alongside, guests will enjoy a gin and tonic featuring Cambridge Dry Gin, rosemary and grapefruit. Truffle Tortellini napped with truffle emulsion, and garnished with chanterelles, corn, saffron ricotta and Pecorino Romano follows. This course will be paired with a Silver Fizz cocktail, made with yuzu cordial and Cambridge Japanese Gin.
As an entrée, guests will enjoy a posh take on surf and turf, with AAA filet mignon and truffle-butter-poached lobster. Made with Cambridge Truffle Gin, a Dirty Truffle Martini with house-made brine of Maldon sea salt, black pepper and rind of Parmigiana is a savoury sip sure to grab guests’ attention. Hoping for a phenomenal finale? A dessert course of Truffle Gin Baba expertly melds the evening’s stars into a single stunner, with a rosemary tuile, blackberry cremeaux and rosewater gel. A last tipple, named the Cantabrigian, takes Cambridge Truffle Gin, bianco Vermouth, Benedictine and thyme into sweet-course territory.
