Two local Toronto chefs are teaming up for a collaboration dinner featuring Southern Chinese dishes. Chef Eva Chin, of Momofuku Kojin, and chef Ken Yau, of k.Market, are teaming up for Feast of Harmony, which will feature classic dishes that they grew up eating. “Every single dish on the menu reflects a dish one of our elders raised us with,” says Chin.
The feast will include five dishes containing various types of dumplings, fish congee, crispy roasted pork belly and a steamed milk pudding dessert. The chicken curry dumpling is a combo of Macanese chicken curry, coconut and potato. The soup dumpling with XO sauce is a pork dumpling filled with broth, steamed crab and pickled ginger. The charcoal roast pork uses a Heritage pork belly with secret spices and smoked hoisin. The full menu can be seen online.
The collaboration came about partly due to the pain being felt by Asian communities across the globe. They wanted to do this in support of the AAPI community. “We will be making meals for Yee Hong Foundation as well as other Chinatown Care Centres with parts of our profits,” says Chin.
