Hover HQ, a Toronto-based organization that facilitates and operates a few ghost kitchens, has a handful of new projects popping up around the city. Two of their latest additions are Dolores Tacos and Good Burgers, conceptualized by Chef Andrew Moore.
The story of Dolores Tacos begins in the Mission District of San Francisco where Moore used to work. He explained that it is an area heavily influenced by Latino culture and 'spotted with what seems like hundreds of taquerias, all doing their interpretation of Mexican food.'
With fond memories of the Mission District, Andrew was inspired to "reflect the local variety" of San Francisco by bringing some of its flare and flavour north of the border. Particularly with Dolores Park, where he would go after work, Moore describes it as "the heartbeat of the neighbourhood."
Dolores Tacos is relatively new, having opened up just a few weeks ago. Currently, they are working on a burrito recipe, one of the things that was missing from the menu according to Moore, as he explained that the Mission District was 'famous for their football sized burritos'.
Good Burgers, which opened for the first time about six weeks ago is a self proclaimed 'chef’d-up version of the classic American cheese". Moore incorporates his experience as a chef who has travelled and worked around the world with familiar ingredients to create an elevated variation of universally recognized flavours.
He drew on the use of caramelized onions as an example––a basic ingredient but 'when it's done well it really is magic,' says Moore. He also borrowed inspiration from smash burgers, which have become increasingly popular recently. Good Burgers aren't necessarily smash thin, but include combined elements of the smash style to create what Moore and the team think is the best burger.
Good Burgers are made with a three and a half-ounce patty, which is then smashed slightly said to get a solid sear on it, but not as wafer thin as some places––the patty ends up a little bit thicker. Moreover, Andrew admitted that the demand for burgers has been insatiable, a reaction that has spurred the upcoming introduction of sandwiches, which will be in keeping with the 'fairly fundamental style' of the Good Burgers concept.
Additionally, the team is working on a third concept that will challenge a new popular food trend.
"We're still narrowing down on a name, but we are [also] working on a fried chicken concept", Moore revealed.
