Texas-style barbecue isn't going anywhere in Toronto, as it seems more and more spots are looking to sling everything from slow-smoked brisket to lacquered ribs. The newest addition to the barbecue scene comes from the man behind Tokyo Hot Fried Chicken, Jordan Gillis, who is working with Folly Brewing owner Andrew Smyka on a new BBQ pop-up called Camp Smokehouse.
Starting Sunday, January 24, Gillis and Smyka will be launching a limited barbecue menu out of Freeplay Arcade. The initial menu offering will include smoked beef brisket sandwiches, smoked french fries and even smoked s'mores for dessert. The beef brisket is a Texas classic and will have been smoked 12 hours leading up to Sunday evening for purchase. The pop-up will be running Sundays only for the time being, but operating hours will be expanded in the future.
"We are meat purists. We don't use any crazy seasoning to get the bark, just straight-up salt and pepper. We use pink peppercorns, black peppercorns, and salt for the bark, and we use oakwood that we source ourselves for the flavouring," Gillis says.
Once sold out, you'll have to wait another week to get your hands on their brisket. Be sure to pre-order online through their site or delivery partners. They'll be doing some deliveries themselves, so support local and order through their website.
