This Toronto pizza pop-up is selling out within minutes

It seems that our city can never have enough pizza joints, and there's a new one to add to the list that offers a unique and coveted style of pie that has proven to make it quite difficult to get your hands on one.

Sohmer's Pizza began, like many things that came out of 2020, as a quarantine side project for owner Daniel Sohmer to keep busy and fuel his passion for pizza-making, which stems from his family traditions. The pizza joint first popped up last summer and, by the fall, was gaining popularity through word of mouth and the power of social media, including from popular Toronto-based food accounts and even well-known chef Rob Gentile. That, combined with the fact that Torontonians are eager to find and support local food spots during COVID, Sohmer's is now selling out of pre-orders for their pizzas, sometimes in a matter of minutes.

The pizza combines two distinct styles that make it stand out from most other options across the city. Grandma pizza is a variety that originated in Long Island, New York and is characterized by its thin, square shape and the fact that it is often cooked "homestyle" in a large pan (rather than a pizza oven). Detroit-style pizza is also rectangular in shape but features a thicker crust that is airy and chewy in the centre and crispy around the edges, thanks to a higher level of dough hydration. When you combine the two, you get a wonderful, super-cheesy, pan-baked pizza with a golden-brown crust and a distinctive tomato-y flavour that perfectly complements the toppings. Sohmer's currently offers just two simple styles, cheese and pepperoni, or you can get a half-and-half pie if you want to experience the best of both worlds.

Pizza orders have to be reserved in advance for pickup every Saturday from Saving Mondays, the bakery at 1655 Dupont, where Sohmer is now making his pizzas. While orders used to only be available through DMs, he has now streamlined things and created an online page that opens up every Wednesday at 3 p.m. Pizzas tends to sell out quickly due to limited quantities and pick up slots, so make sure to place your order right away if you want to get your hands on this incredible pizza (and trust us - you do!)
