You may have seen the fascinating brioche cubes circulating social media, and Toronto's Le Beau is the perfect place to get your hands on them. Their cubed loafs are rich and tender, with the signature brioche bread texture.
Le Beau is a croissanterie, cafe and dessert bar that rolls and bakes all of their products every day in-house. They specialize in croissants, laminated dough, high-quality seasonal pastries and other baked goods. Laminated dough is a process where butter is folded into dough numerous times to create thin, alternating layers of dough and butter. This is one of the many components that go into Le Beau's croissant-making process, which takes over two days. Their delicious croissants have a crispy surface with a light and airy inside. They contain over 30 per cent high-quality butter, which consists of 84 per cent European-style butter.
Le Beau's executive pastry chef, Olga Spivak, has worked in the pastry industry for many years. Spivak trained at the Ecole Nationale Supérieure de la Pâtisserie in France, and worked at a renowned pâtisserie in Paris. She has learned from some of the best professionals worldwide and values high-quality ingredients, craftsmanship, simplicity and tradition in her creations. In a minimalist trend-setting style, Spivak practices precision and excellence in her work.
Spivak came up with the name 'Le Beau' during her time in Paris. She was so blown away by the city's architecture and history that she would look around and say, "this is beau."
Interestingly enough, Spivak originally studied finance before she lost interest in the subject when she moved to Canada. She now uses her finance skills for recipe calculations.
Le Beau is located at 665 Dundas Street East, and their hours are Wednesday to Sunday from 9:00 a.m. to 5:00 p.m.
