There’s a new pizza place in town and it’s a-cute one!
Acute Pizzeria opened on May 9 at 1745 Dundas St. W., at the corner of Dundas and Lansdowne. The new west end pizzeria boasts whole pies, slices, and chicken wings on its menu.
What gives Acute Pizzeria an edge, however, is that all of its pizzas are made with sourdough - and there is a story behind this choice.
Founders Thalia Ly and Hieu Nguyen went to many cities, like New York and Vancouver, to find inspiration for good pizza. While Ly was formerly a designer in Vietnam who graduated from college in Toronto, Nguyen grew up in Toronto and his family had a pizza shop in North York for two decades. The couple says that making pizza has always been in Nguyen’s veins, having dreamt of owning a pizzeria since he was 15.
Through all of their pizza trials, they found that traditional dough could be hard on the stomach. Seeking more digestible pizza solutions for Ly’s stomach in particular, Nguyen happened to find a book at the library that mentioned sourdough, and the rest is history.
So, Nguyen and Ly choose to make sourdough pizzas because it is a healthier and easier to digest alternative to traditional dough. The sourdough at Acute Pizzeria is naturally leavened for 72 hours to complete fermentation, so that the crusts are flavourful, light, airy, and crispy.
Acute Pizzeria boasts 14 and 16-inch pies, including meat, vegetarian, and vegan options. From classics like margherita and funghi, to meaty and spicy options like La Carne with fennel sausage and Montreal smoked ham, to the Jala Pep with spicy honey and pecorino, there are 11 pizzas to choose from.
Fresh chicken wings, chicken bites, potato wedges, and truffle fries are among the other goodies available on the menu. The shop also has some fun sodas, like Pepsi Mango, Brio Chinotto, and a few different kinds of Crush.
