One of the city’s most popular cookie stores is opening a second location next month.
Owned by Mitchell and Leanne Cabrera, The Night Baker is known for their soft and chewy cookies that come in some unique flavours like coconut pandan, campfire s’mores and carrot cake. The husband and wife duo opened their first brick-and-mortar location on the west side of Toronto back in 2019. Fast-forward two years later and the chemists turned night-time bakers will be giving those on the Danforth a taste of their freshly baked cookies.
“When we walked around the area, we fell in love with the neighbourhood, which we’ve been to so many times before,” said Mitchell.
This new storefront will have the same menu as their original location, which includes five flavours that they always keep, plus three to five seasonal flavours that rotate every three to six weeks.
Most of their flavours are inspired by their Filipino heritage, like their sought after Ooh Bae (ube) cookie that resembles a galaxy.
They even plan on producing Greek-themed cookies exclusively for their Danforth location that will be located at 405 Danforth Avenue.
They’re expected to open in August, but keep an eye out on their Instagram page (@thenightbakerto) and behind-the-scenes backup account (@thenightbakercookies) for an official opening date.
