Formerly of Marben, one of Toronto’s most beloved farm-to-table restaurants, Locke has created a menu of dishes for Lighthouse45 inspired by his devotion to seasonal, locally-sourced fare. Launching on June 8th, the new menu reflects months of research, new relationships with local farms, wineries, suppliers, and more, and a team well-versed in the restaurant’s new direction. “Rawley is such a beautiful resort in such a stunning part of the province,” said Locke, in a press release. “When I was presented with the opportunity to recreate the Lighthouse45 menu with a local flavour and a focus on sustainability, I jumped at it. I can’t wait for guests to experience what we’re dreaming up!”
Standouts on the new menu include Potato, Sour Cream and Onion, made with organic potatoes from Cookstown Greens, high welfare Heritage Pork Chop and White Pine Crème Caramel, a dish that salutes one of Ontario’s most symbolic and abundant evergreens.
