Pretty Little Layers launches a visually stunning new menu for 2022

Pretty Little Layers, previously featured on TasteToronto here, has some big 2022 changes in store for French patisserie lovers in Toronto. The new treats are available right on time for Valentine's Day, so if you want to gift your loved one something impressive and delicious, look no further than Pretty Little Layers.

As a little refresher, the Cordon Bleu-trained pastry chef Rochelle Desouza started Pretty Little Layers in 2015 but took a break as she focused on her career. After being laid-off from her job at Alo during the pandemic, she found her way back to Pretty Little Layers again and is now fully dedicated to providing Toronto with some of the most stunning cakes on the market.

Rochelle's cakes are works of art as much as they are culinary delights––she uses a mirror-glaze technique to make her mesmerizing French entremets, and earlier in 2021 launched her now bestselling "Ferrero Rochelle" which has a gorgeous milk-chocolate glaze with crunchy hazelnuts. Both her traditional mirror-glaze and the Ferrero Rochelle are being baked in a romantic heart-shape, right on time for Valentine's Day (as if circles weren't cute enough!). For the first time ever, she is also releasing a gorgeous clustered hearts shape to her Valentine's market, as well as a double-heart topping. Am I writing this entire article to drop major hints to my partner? Maybe.

In 2022, Desouza will also be creating a Season 2 of her tasting menu. The original tasting menu was launched upon request for those who wanted to try all her flavours before committing to a single one (or for those who like to eat an entire cake in one sitting without the guilt). The tasting menu is composed of four flavours of mini-entremets in a unique package, they are temporary and limited release, and orders are all submitted in one day. Currently Rochelle is playing around with lychee, rose, matcha, espresso caramel and lemon blueberry, follow her Instagram to be kept in the know for when Tasting Menu Season 2 officially drops.

Another jaw-dropping 2022 release is a two-tiered mirror glaze masterpiece––it could be an untraditional wedding cake for those creative souls that want something a little different for their special day, or otherwise a show-stopping treat for your loved one. You can give Rochelle a colour scheme to work with, or otherwise give her creative freedom to work her magic––either way, you are guaranteed a unique and vibrant design, as no two entremets ever look the same.
