Roshan Kanagarajah, aka Kitchen Guerrilla, a chef from Toronto, will be doing a food truck pop-up with Cheese Boutique on the weekend of May 1 and 2. Kanagarajah is best known for his hot sauces and marinades, specifically his Neruppu Tamil Hot Sauce.
The CB Food Truck Takeover is a weekly pop-up that hosts top chefs from across Toronto. Every week there is a new menu and chef that curates unique dishes. Cheese Boutique started this initiative early in March and has hosted vendors such as Chen Chen’s Nashville Hot Chicken, Curry King, Famiglia Baldassarre, Marben, La Palma, Chef Devan Rajkumar and many more.
Cheese Boutique is a Toronto institution that carries hundreds of imported cheeses from across the world and has been in operation since 1970. They cure their own cheeses and meats with three different ageing rooms in the shop. You can also find pasta, yogurt, truffles, sauces, baked goods and plenty more at Cheese Boutique.
This upcoming weekend Kitchen Guerrilla has something special in mind for the pop-up. Using his own spicy jerk marinade, he plans to serve a jerk chicken sandwich in a coco bread bun with coleslaw and hot sauce. The jerk chicken will be cooked as it would be in Jamaica, over coals and smoked likely with pimento. The next item on the menu will also serve the same sandwich using local mountain oak-smoked gouda from Cheese Boutique. Kitchen Guerrilla will also be offering a Tamil-style grilled cheese with local aged cheddar and seeni sambol (a Sri Lankan-style spiced caramelized onion-chutney condiment).
The Kitchen Guerrilla brand first started in 2015. Kanagarajah, who first worked at a few restaurants across the city, decided that he wanted to start his own line of hot sauces and marinades. When he first started making batches for his friends and family, he received many positive responses and encouragement to expand. Kanagarajah then began to create a full line of sauces that were inspired by a blend of cultures. He even has a product line called Ksira Gelato, a line of premium gelato flavours inspired by Sri Lankan flavours.
Cheese Boutique hopes to bring the food industry together during this time and plans to continue the CB Food Truck Takeover until August.
