Fussion Sushi is a family-owned business that features sushi with Peruvian-inspired flavours.
Nicolás and Isabella moved to Toronto from Peru over a year ago and soon they realized that even though the city had many places to eat sushi, none of them made sushi the way they used to eat it in Peru. They started making their own sushi at home and after receiving great feedback from their friends, they decided to open their own place in Toronto.
Fussion Sushi opened its doors at the end of November in Kensington Market to join the many Latin restaurants that are part of the food scene in the area. The interior isn’t designed for eating in, so they are currently only offering take-out and delivery.
The rolls served at Fussion are inspired by Peruvian flavours containing toppings and sauces that are made using traditional ingredients from the country, such as spicy yellow pepper, lime, passion fruit and others.
Unbeknownst to some, Peru, outside of Japan, has one of the largest ethnic Japanese populations in the world and this community has made significant impacts on their gastronomy, so it is not a surprise that Peruvians made a twist on traditional sushi. Fussion Sushi boasts a menu of maki rolls, made just like they are in Peru.
"People visit Kensington Market to try something new and different and this is what we offer. We are different from any other sushi place in the city," says Nicolas.
Currently, the menu has 11 different types of rolls––one of their highlighted menu items is the Sunrise, made with sushi rice, crab meat, avocado, topped with citric sauce and fried sweet potato bits. Nicolas explained that the sauce of this roll is what is known in Peru as "Leche de Tigre," a citrus-based marinade used to cure the fish in classic Peruvian ceviche.
Another must-try is the ACV, which is a type of roll that is very popular in Peru and is made with sushi rice, shrimp, avocado, topped with signature lemon mayo sauce with togarashi on top.
To celebrate their grand opening, they will have special offers during the entire month of December. Now, customers can get 10 pieces of any roll on the menu plus a drink for $10.
