Insomnia Cookies to finally expand into Canada

In a city with as vibrant of a nightlife scene as Toronto, it's no surprise that a myriad of food joints are open till the wee hours of the morning. One glaring omission from the slew of offerings is a spot offering late-night desserts that satiates the (often-inebriated) sweet cravings one might have post-midnight. That gap is closer than ever to being filled. 

Insomnia Cookies — the very-popular chain of bakeries across America that specializes in serving warm, gooey and chewy cookies into the night — is poised to expand outside of the U.S. for the first time and Canada is on its list of expansions. Although the exact locations are yet to be decided, the GTA is going to be where the first set of stores land. 

“From a college start-up, we’ve come a long way over the last 20 years, and this year’s national and international new stores openings are just a taste of what’s to come for Insomnia Cookies,” Seth Berkowitz, founder and CEO of Insomnia Cookies, said. 

Insomnia, ever since its inception, has been the hub for college students across America. With over 230 locations, there's a large chance that any major university campus you visit has a branch of this beloved bakery chain. 

With Toronto having a large population of students as well, owing to the numerous colleges and universities across the GTA, there's no doubt in our mind that a set of Insomnia Cookies locations across the city would be met with anything but open arms (and mouths). While students might make up a large percentage of the target demographic, cookies are for everyone. Who wouldn't love biting into a warm, decadent baked good at 1 a.m.? 

While it serves the staple flavours like chocolate chunk, red velvet, snickerdoodle and oatmeal raisin, the chain also dabbles in a lot of fun concoctions like the "Deluxe Filled Espresso Martini," "Limoncello" and "Piña Colada." Outside of cookies, Insomnia also serves brownies, ice creams, ice cream sandwiches and cookie cakes. It also offers gluten-free and vegan options, too. 

There's a reason the chain has seen gargantuan heights since its inception — there's truly something for everyone on its menu. And it's now headed north of the border to spread its decadence with its Hoser cousins, much to everyone's delight.

With the opening of the first set of stores merely a few months away, we can't wait to see Toronto's food and nightlife scene gain another attraction.
