Redefine your gelato experience by dropping by the newly opened SOLATO in Stackt Market. With a focus on serving gelato through a made fresh to order concept, the group integrates modern technology to produce this frozen dessert within minutes. Their goal is faster and fresher, all while supporting local and reducing energy consumption.
Similar to the use of coffee pods, SOLATO uniquely uses recyclable capsules filled with all the necessary ingredients. Their bases are made using no preservatives, no artificial colours or flavours and have up to 40 per cent less sugar than typically required.
Once the right flavour pod is inserted into the machine, fresh gelato will be dispensed at the perfect temperature, with a smooth and creamy texture.
From there, you can select from a variety of toppings to add to your dessert, including Cacao Barry chocolates. With the intent to support small as much as possible, SOLATO partners with local businesses to bring elements of their brand to life. This includes using halva from Parallel Restaurant and sourcing some toppings from Toronto pastry chef Jeroen Van Helvoirt.
SOLATO identifies as an eco-friendly company due to all the energy they save in not requiring transportation and insulation of gelato. Not having to keep the gelato cold all the time due to their pod-based system allows them to save on energy use. Despite using individual capsules to produce individual portions of gelato, the company has a recycling program linked to their pods in which they re-invest into farming.
According to representatives from the brand, through using their single-serve capsule system, 85 per cent of overall energy consumption is reduced, 95 per cent of their carbon footprint is eliminated and there is a 60 per cent improvement in reducing transportation and storage capacity.
SOLATO originates in Maalot, Israel, with its research and design team being in Tel Aviv. This location in Toronto is the first official retail space for SOLATO in North America. Their headquarters here are in Montreal.
The current menu offers Frozen Yogurt, Berry Yogurt, Dark Chocolate, Vanilla, Hazelnut and Raspberry Sorbet. You can also have a shot of Nespresso espresso poured over your gelato by getting an Affogato.
