Each year, the month of April is celebrated as Earth Month around the globe in an attempt to raise awareness and create consciousness around the issues surrounding climate change. This is the only planet we all inhabit; the fact that it is rapidly deteriorating means we as a society need to come together to find a way to combat this cause for concern.
1 Hotel Toronto, inspired by the city's diverse natural environment and the tranquil expanse of Lake Ontario, is commemorating the event by partnering with leaders spearheading sustainability development while looking to provide guests and locals alike with an experience of serenity.
The "sustainable sanctuary" is offering food and drink specials all month long that champion the planet and push forward the need for sustainability.
On the menu is a limited edition sustainable gin-based cocktail that has been purposefully designed by the hotel's Director of Beverage, Clement Bondois. It is available at 1 Kitchen Toronto, Flora Lounge and Harriet's Toronto.
Sapphire Tides: Created with Bombay Sapphire, this Earth Month cocktail uses 100% sustainably-sourced botanicals in its gin. Keeping with the theme, this drink incorporates aquafaba, a vegan alternative to egg white, to acquire that velvety mouth feel that the egg provides, but without the carbon footprint. The cocktail is finished off with a custom 1 Hotel Toronto wafer made from edible ink and wafer paper, which is gluten-free, vegan, sustainable, sugar-free as well as odourless.
As for the food, 1 Kitchen Toronto is offering dishes which guests can eat mindfully, incorporated with unique and sustainable features, courtesy of Chef de Cuisine, José Matamoros.
Trout Crudo: A light and refreshing dish that showcases the trout fish with a tropical twist. The fish is cured in red miso for texture and an umami flavour, which contrasts perfectly with the acidity and sweetness of the rhubarb juice. To round it up, the shiso oil adds herbal notes and the bronze fennel leaves a touch of licorice.
Grilled Lamb Chop: Preserving the commitment to use organic and sustainably sourced food from 100 kilometres, this dish is made with the finest local ingredients. Our lamb has been marinated in an array of spices, giving it the perfect smokey crust. Providing a balanced taste palate, the dish includes goat tzatziki for a cooling effect, chermoula for acidity, and pomegranate for sweetness.
Outside of food and drink specials, 1 Hotel Toronto also has a slew of other events planned for the entirety of the month, some of which include a mindful mixology class using 818 Tequila which champions sustainability, on-property tours which dive deep into the ethos of the hotel, a pop-up shop featuring sustainable clothing and even a honey-inspired brunch.
