Ingredients

The Well 76 Cocktail

  • 1-1/2 oz Empress 1908 Indigo gin

  • 1/2 oz emulsified honey (Rosewood Estate Winery wildflower honey combined with equal parts hot water)

  • 2 dashes Dillon's aromatic bitters

  • Dehydrated lemon wheel (for garnish)

  • 1-1/4 oz Sparkling wine (to top)

  •  3/4 oz lemon juice

  • Step 1

    In a cocktail shaker, combine the Empress 1908 Indigo gin, emulsified honey, and aromatic bitters.

  • Step 2

    Fill the shaker with ice and shake well to combine the ingredients and chill the cocktail.

  • Step 3

    Strain the mixture into a chilled coupe glass.

  • Step 4

    Garnish with a dehydrated lemon wheel.

  • Step 5

    Mix the lemon juice with sparkling wine and serve on the side in a carafe.

  • Step 6

    Slowly pour the sparking wine infusion into the coupe glass to create the colour-changing effervescence.
