Taking our own spin on the viral baked feta pasta dish, we've swapped the pasta for fried lasagna crackers, perfect for pairing with the tomato feta dip, which gets sprinkled in a layer of mozzarella and broiled in the oven.

Roasted Feta and Tomato Dip

Step 1
Preheat oven to 400°F. In a 9 x 13 inch baking dish, toss cherry tomatoes in a 1/4 cup of olive oil, salt, pepper, garlic and red chili flakes. Place feta in the middle of the baking dish and pour remaining 1/4 cup olive oil over top.
Step 2
Bake in the oven for 40 minutes. Remove from oven and mix thoroughly (reserve a handful of tomatoes for garnish), breaking down tomatoes and distributing feta evenly. Mix in sour cream and basil.
Step 3
Turn over to broil (high heat). Using the same baking dish or scooping out tomato mixture into a smaller oven-safe bowl, sprinkling top with mozzarella and bake until cheese is golden brown. Top with reserved tomatoes and torn basil leaves.
Fried Lasagna Crackers

Step 1
Boil lasagna sheets until al dente in salted water. Remove and let cool slightly. Cut into bite-size pieces. In a bowl, coat pasta in olive oil, salt, pepper and Italian seasoning. Cook in an air fryer set to 400°F for 6-7 minutes or until lightly golden in colour.
Step 2
Serve dip with lasagna crackers, bread, crudite or any other crackers of your choice!
