On day 2 of recreating our favourite dishes in Toronto, we’re making the Sticky Toffee Pudding from Maple Leaf Tavern - a classic decadent treat in the city! This rich and indulgent dessert has a moist crumb thanks to the addition of dates, and although the cakes are phenomenal on their own, it gets that much better when topped with a warm and rich toffee sauce. It's the ultimate comfort food and a must-try for anyone with a sweet tooth. Serve with a scoop of vanilla ice cream for that perfect bite!

Maple Leaf Tavern Inspired Sticky Toffee Pudding

Step 1
Preheat the oven to 350°F and grease 6 ramekins thoroughly.
Step 2
Remove the pits and chop the dates. Place the chopped dates in a bowl and cover with boiling water. Add the baking soda and mash with a fork until the mixture is soft.
Step 3
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Step 4
In another bowl, beat the unsalted butter, granulated sugar, and dark brown sugar until the mixture is fluffy. Add the eggs, mixing well until the batter is smooth.
Step 5
Add the flour mixture to the butter and sugar mixture, mixing until just combined. Fold in the date mixture until well incorporated.
Step 6
Scoop the batter into the ramekins, filling each about two-thirds full. Bake for 35-40 minutes, or until a toothpick inserted into the centre comes out clean. Allow the cakes to cool slightly.
Step 7
To prepare the toffee sauce, combine the heavy cream, dark brown sugar, molasses, and salt in a saucepan. Cook over medium heat, stirring constantly until the mixture comes to a boil. Reduce the heat and let it simmer until smooth and slightly thickened. Remove from heat and let the sauce cool. It will continue to thicken as it cools.
Step 8
To serve, remove the cakes from the ramekins and place them onto serving plates. Generously drizzle with the toffee sauce and serve warm with a scoop of ice cream on top.
