Madeleines -- the cake is known as the muse of tea parties and is famous worldwide. We might expect this cake to be complicated, but in fact, this lovely cake is relatively simple to make. This recipe is for three flavours of madeleines, matcha green tea, chocolate and vanilla.

Madeleines (for all 3 flavours)

Step 1
Mix eggs, sugar and vanilla in a bowl.
Step 2
Sift flour (matcha powder or cocoa powder) and baking powder into the egg-sugar mixture.
Step 3
Pour in melted butter and mix well.
Step 4
Put the dough in the refrigerator for 1 hour.
Step 5
Make Dulce De Leche Sauce. Put sugar in a pot and cook on low heat until light brown.
Step 6
Add butter and mix well with a little salt.
Step 7
Slowly pour in milk and mix well.
Step 8
Continue to slowly pour in condensed milk and mix well, stirring on low heat until the mixture is thick and flexible.
Step 9
Let the sauce mixture cool down and store it in the refrigerator.
Step 10
Preheat oven to 180°C. Bake for 10 minutes.
Step 11
Grease madeleines mould with butter.
Step 12
Put the dough into the mould and add a little sauce, then cover the sauce with more dough and put the cake in the oven.
Step 13
When the cake is cooled, clean the mould, pour the seashell mixture from melted chocolate, then put the whole cake tray in the refrigerator for about 30 minutes to finish the super delicious and beautiful scallop cake.
