I never really understood why the famed TikTok pasta with baked tomatoes and feta went viral. In its simplicity, it was brilliant, but does anybody really like feta that much? And beyond that, is feta really the most ideal cheese to use in a recipe like this? In my humble opinion, the answer is a clear and resounding no. My cheese of choice for this recipe makeover is creamy and decadent French Boursin. Think of it as a levelled-up French version of cream cheese spiked with garlic and herbs like parsley and chives. This cheese is mild in flavour and incredibly creamy when melted, making for a perfect sauce when paired with the juicy and slightly tart roasted tomatoes.

Step 1
Preheat the oven to 400°F.
Step 2
In a large baking or casserole dish, combine the tomatoes, olive oil, salt, freshly cracked black pepper and mix. Make a well in the centre of the tomatoes and place the block of Boursin cheese.
Step 3
Bake in the preheated oven for 30 minutes.
Step 4
While the tomatoes and cheese are baking, bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente and strain.
Step 5
After 30 minutes, turn the broiler on high and broil for 2-3 minutes until the tomatoes have burst and both the tomatoes and cheese have taken on a golden brown colour.
Step 6
Remove from the oven, add in the chopped garlic, chopped parsley, cooked pasta and mix well.
