Furikake Eggs with Avocado Toast

Beyond the addition of a perfectly jammy soft boiled egg, this recipe features the use of furikake, which is a Japanese seasoning mix typically used to season rice but can be used for so much more than that; think fries, popcorn, roasted veggies, roasted salmon, fried rice topping or scrambled eggs. It is most commonly composed of sesame seeds, seaweed, sugar, salt and monosodium glutamate but other variations also contain chilies, bonito flakes or even dehydrated salted egg yolk. The eggs here are boiled for 6 minutes, yielding a semi-firm white exterior, with jammy but not overly runny yolks. Feel free to cook the eggs for as little or as long as you like depending on boiled egg preference. This is an easy but necessary update on the breakfast that has seemingly defined an entire generation. I mean, are you even a millennial if you haven’t made avocado toast?

Furikake Eggs with Avocado Toast

Step 1
Peel and core the avocado, place in a bowl. Using a fork, mash the avocado and mix with the lime juice, salt, fresh cracked black pepper and a splash of olive oil. Set aside.
Step 2
Bring 4 cups of water to a rolling bowl in a pot. Using a slotted spoon to prevent the eggs from bouncing around and cracking, gently lay in the eggs and cook for 6 minutes. The slotted spoon can be removed after 2 minutes. After 6 minutes of cooking, immediately remove the eggs from the boiling water and allow to cool in a bowl filled with cold water for 3-4 minutes.
Step 3
While the eggs are cooking, preheat a pan large enough to fit the two slices of sourdough on medium0low heat. Add in the 2 tablespoons of extra virgin olive oil , then place the two slices of sourdough bread and toast in the pan until deeply browned, approximately 2-3 minutes, flip and toast on the other side..
Step 4
Remove toasted bread slices from pan and immediately rub the surface of each toast with the garlic clove until fragrant, season lightly with salt and pepper then cut each toast in half on a slight diagonal
Step 5
To assemble: spread the smashed avocado on top of the toast slices, then carefully peel and halve the soft boiled eggs, place on top of the avocado spread. Top each egg with a sprinkle of furikake seasoning and serve immediately.
