This recipe for cilantro lime chicken and mango salsa is fresh, healthy and a perfect amalgamation of ingredients! The mango salsa is sweet, tangy and packed full of chopped veggies, cilantro and lime! The salsa recipe is from Cookie and Kate. The chicken is marinated before searing, which guarantees the deep flavour and extra juiciness! The chicken recipe is adapted from Lauren Miyashiro. This meal does involve a lot of chopping, but it is worth it! The number of hot days are dwindling and this meal definitely screams summer! Mango Salsa

Step 1
Add all mango salsa ingredients to a large bowl. Toss to evenly combine. Taste and add additional jalapeños, salt or lime juice. For best flavour, chill salsa in the refrigerator for 30-60 minutes.
Chicken

Step 1
Whisk together 2 tablespoons oil, lime juice, cilantro, garlic, cumin and red pepper flakes. Add chicken and toss to coat. Let marinate in the fridge for 30 minutes and up to 2 hours. Make mango salsa while the chicken is chilling.
Step 2
In a large ovenproof skillet over medium-high heat, heat the remaining 2 tablespoons oil. Sear both sides of chicken on high then reduce heat and cook for about 5-10 minutes until done.
Step 3
Serve with mango salsa, rice or any other side of choice.
