Apple Crumble for Two

Ingredients

Topping

  • 1/4 cup all-purpose flour 

  • 3 tablespoons old-fashioned rolled oats

  • 2 tablespoons brown sugar, plus more for sprinkling on top

  • 1/8 teaspoon cinnamon

  • Pinch of salt

  • 2 tablespoons cold unsalted butter, cubed

Filling

  • 2 large Granny Smith apples peeled, cored and chopped (about 2 cups)

  • 1 tablespoon all-purpose flour

  • 2 tablespoons brown sugar

  • 1/4 teaspoon cinnamon

  • 1 tablespoon unsalted butter or oil (for ramekins)

  • Step 1

    Preheat oven to 350°F. Spread butter or oil in two 10-ounce ramekins and set aside, you may also cook this in one larger sized ramekin.

  • Step 2

    In a medium mixing bowl add chopped apples, flour, cinnamon and sugar until all of the apple pieces are coated well. Scoop into each ramekin and set aside.

Topping

  • Step 1

    In a medium mixing bowl add the flour, oats, 2 tablespoons brown sugar, cinnamon, and salt and mix until well combined. Add in the cubed butter and work the mixture together with your hands or a fork until it starts to clump together. Evenly distribute the topping between both ramekins on top of the apple filling. Sprinkle 2 extra teaspoons of brown sugar on top.

  • Step 2

    Bake at 350°F for 20-25 minutes or until the apples are cooked through and the topping is lightly golden brown. Allow to cool for about 5-10 minutes. Serve with ice cream or enjoy on its own!
