Step 1
Preheat your oven to 350°F and lightly grease two donut pans with nonstick cooking spray. In a medium bowl, add all of your dry ingredients (flour, baking powder, salt, nutmeg, and 1 teaspoon of cinnamon) and whisk to combine. Set aside.
Step 2
In the bowl of a stand mixer fitted with the paddle attachment, add 10 tablespoons of butter, brown sugar and 1/4 cup granulated sugar on medium speed until light and airy (4 minutes).
Step 3
Beat in eggs one at a time, mixing thoroughly and scraping down the bowl. Mix in vanilla extract until incorporated.
Step 4
Add the flour in three additions, mixing on low in between until incorporated. With the mixer on low, slowly stream in the apple cider. Mix to combine.
Step 5
Pour into donuts pans and bake for 30 minutes, checking at 20 minutes.
