Beans on toast but make it spicy vodka sauce beans. We whipped up a homemade spicy vodka sauce for a batch of gigantic white beans. Piled high on a crispy slice of sourdough and topped with Sunspun chili flakes, we’ve got lunch figured out for you!

Step 1
In a large pot or Dutch oven, heat up 1/4 cup olive oil over medium heat, add shallot and cook for 4 minutes, season with salt and pepper. Add garlic and chili flakes, cook for 1 minute, stirring.
Step 2
Add tomato paste and cook for 5 minutes or until a brick red colour begins to develop. Add vodka and cook for 2 minutes or until evaporated. Stir in heavy cream and cook for 5 minutes. Add beans, unsalted butter and Parmesan, adjust consistency with a few tablespoons of water if needed.
Step 3
Toast sourdough, top with beans, additional chili flakes, basil and flaky salt. Serve!
