Experience a Toronto favourite right at home with this version of Schmaltz Appetizing's Latka Double Down! Latkes, which translates to ‘pancakes,’ are made of shredded russet potatoes, white onion, egg and a binder. They are fried until extra crispy and are a vessel for various toppings. This sandwich variation is filled with scallion cream cheese, smoked salmon, red onions and capers to make the best bite. No wonder it's a Toronto fav!

Schmaltz Appetizing Latke Double Down
7 Steps
Step 1
Shred the russet potatoes and white onion. Place them in a cheese cloth or kitchen towel and wring out as much liquid as possible into a separate bowl. Reserve the starchy liquid.
Step 2
Allow the starchy liquid to sit so the starch settles at the bottom. Drain the water and keep the starch at the bottom of the bowl.
Step 3
In a large mixing bowl, combine the shredded potatoes and onion with the reserved starch, egg, breadcrumbs, and a pinch of salt. Mix thoroughly using your hands until well combined.
Step 4
Heat canola oil in a pan over medium-high heat. Using a 1/2 cup measuring cup, scoop the potato mixture into the hot oil, pressing down lightly to flatten. Cook until deep golden brown, about 5 minutes, then flip and cook for an additional 5 minutes on the other side.
Step 5
Remove the latkes from the pan and place them on a cooling rack to drain excess oil.
Step 6
In a bowl, combine sliced scallions with cream cheese and mix well. Set aside.
Step 7
To assemble the sandwich, spread scallion cream cheese on both latkes. Top with smoked salmon, sliced red onion, and capers.
