Scallion and Feta Pancake

Everyone knows and loves a crisp scallion pancake (cong you bing), but we took the traditional Chinese dish and added feta for an extra layer of flavour. Cong you bing is a savoury unleavened flatbread filled with minced scallions, which is then fried in oil. The difference from a Western pancake being that the pancake is made from a dough, not a batter, giving the final result a crisp and chewy texture. We picked up all of our necessary ingredients at Wholesale Club and opted for Sunsun AP flour and feta for this recipe. And, of course, we made the requisite dipping sauce to go along with this dish!

Scallion and Feta Pancake

Step 1
In a large mixing bowl, combine the flour and salt. Gradually add the warm water while stirring continuously until a soft dough forms. Knead the dough for about 5 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
Step 2
In the meantime, prepare the dipping sauce by combining soy sauce, sugar, rice vinegar, chopped scallions and sesame seeds in a small bowl. Stir well until the sugar is dissolved. Set aside for the flavours to meld.
Step 3
After the dough has rested, divide it into 4 equal portions. Take one portion and roll it into a thin rectangle with a rolling pin. Brush the surface with butter and sprinkle a quarter of the chopped scallions and feta cheese evenly over the dough.
Step 4
Starting from one end, tightly roll up the dough into a long tube. Then, coil the tube into a spiral shape and tuck the end underneath. Flatten the spiral gently with your hand.
Step 5
Repeat the process with the remaining dough portions, scallions, and feta cheese.
Step 6
Use a rolling pin and roll each pancake into 1/2 inch thick.
Step 7
Heat a non-stick skillet or frying pan over medium heat and add 1 tablespoon of vegetable oil. Place one pancake in the pan and cook for about 2-3 minutes on each side until golden brown and crispy. Repeat with the remaining pancakes.
Step 8
Once cooked, transfer the pancakes to a cutting board and cut each pancake. Serve hot with the prepared dipping sauce on the side and enjoy!
