Nasi Goreng translates to fried rice in both the Indonesian and Malay languages. The dish is very popular in Indonesia and is typically served with a fried egg. As Indonesia's take on fried rice, what sets this dish apart from other country's variations is the incorporation of kecap manis, a sweet soy sauce.
Little Sister, Toronto's destination for Indonesian fare, shares their original recipe for nasi goreng. Typically eaten for breakfast, the restaurant boasts the dish as something super versatile and really easy to make. Everyone makes it differently but Little Sister prefers to opt for a vegetarian version.
Most importantly, make sure your rice is actually a day old and dry, if not it will be hard to achieve a crispy texture.

6 Steps
Step 1
In a frying pan over medium heat, add enough neutral oil to coat the pan. Once hot, add your protein and onions and fry until onions become fragrant (3 minutes).
Step 2
Add your garlic, fresh ginger, sambal olek, coriander, cumin, carrots and gai lan and fry until meat is almost cooked.
Step 3
Add the cabbage and fry for 3 more minutes.
Step 4
Add rice and cook on medium to high heat until rice is hot and starts to slightly crisp up (be careful not to burn the rice).
Step 5
Once rice is hot, turn off the heat and add some kecap manis and mix well to incorporate. Finish seasoning with salt and more kecap manis (to taste). The rice should first taste slightly sweet, then salty, then spicy.
Step 6
Top with a fried egg. You can also make an omelette, cool it down, cut it up and toss it in at the end when you add the kecap manis.
