Pita Bread
7 Steps
Step 1
In the bowl of a stand mixer, add the lukewarm water, yeast and sugar. Mix and let sit for about 10 minutes. Add the flour, olive oil and salt. With the hook attachment, knead until the dough comes together.
Step 2
Transfer the dough to a working surface and knead the dough for about 5 minutes until smooth and elastic.
Step 3
Place the dough in a greased bowl and cover it with a clean cloth. Let it rise for 1 hour or until doubled in size.
Step 4
Punch the air out of the dough. Divide the dough into 4 equal portions. Roll each portion into a small ball. Cover with the towel and let sit for about 20 minutes.
Step 5
Roll each portion into a circle, about 1/4-inch thick. Cover again and let sit for another 20 minutes.
Step 6
Heat up a non skillet pan over medium heat. Place one rolled dough at a time onto the pan. Cook on one side for about one minute. Flip and cook for another two minutes. Flip again and cook until the bread puffs up.
Step 7
Wrap the pita with a clean towel and cook the rest of the dough.
Roasted Chickpeas

Step 1
Preheat the oven to 400°F (200°C).
Step 2
Pat the chickpeas dry using a kitchen towel or paper towel.
Step 3
In a bowl, toss the chickpeas with olive oil, cumin, paprika, and salt until evenly coated.
Step 4
Spread the chickpeas on a baking sheet and bake for about 20 minutes, stirring halfway through, until crispy and golden brown.
Step 5
Remove from the oven and set aside.
Hummus

Step 1
In a food processor, add all of the ingredients except for water.
Step 2
Process until smooth and creamy. If needed, add water gradually while blending until you reach the desired consistency.
Step 3
Taste and adjust the seasoning by adding more salt or lemon juice if desired.
Step 4
Spread the hummus onto a serving plate.
Step 5
Sprinkle the roasted chickpeas over the hummus.
Step 6
Top with olive oil, sumac and pickled jalapeños.
Step 7
Serve the hummus with the homemade pita bread on the side and enjoy!
