Banana bread may have had a shining moment during the peak of quarantine, but it was about time this classic treat got the recognition it deserves, and it certainly isn't going anywhere. A great banana bread recipe has plenty of rich banana flavour (the riper, the better -- we're talking very brown/black bananas here), a moist crumb and of course, many pockets of melty chocolate. This version gets the addition of rolled oats to give it some welcomed flavour and texture reminiscent of an oatmeal chocolate chip cookie. It also happens to be gluten-free, made from a combination of oat and almond flours that lend a perfectly tender texture. We bet this loaf won't last more than a day or two on your counter!

Gluten-Free Oatmeal Chocolate Chunk Banana Bread

Step 1
Preheat oven to 350°F and grease or line a standard loaf pan.
Step 2
In a large bowl, mash your bananas until mostly smooth. Add your melted butter or oil, sugar and maple or honey and whisk well until combined. Add your eggs and vanilla and beat until you have a smooth, glossy mixture.
Step 3
To the wet ingredients, add your oat flour, almond flour, cinnamon, baking powder, baking soda and salt. Gently stir until just combined. Fold in your rolled oats and chocolate chunks (and nuts if using) until evenly incorporated.
Step 4
Pour batter into your loaf pan and bake for 45 minutes or until the middle is set and a cake tester inserted in the centre comes out clean.
Step 5
Let cool for 30 minutes before removing from the pan. Slice and enjoy!
