Is there anything better than the smells of vanilla and butter in the morning? These French toast bites are THE ULTIMATE breakfast/brunch recipe. They are simple, fun to make and you can serve them with three different styles of sauce to satisfy others even more!
Unlike regular French toast, this recipe asks to cut your bread in bite-size pieces, which means extra crunch in every bite!
I used vanilla bean in this recipe but feel free to add vanilla paste or extract instead.
These French toast bites are best to enjoy immediately while they are warm and crispy, but you can also refrigerate them for up to two days and reheat them before serving.

Step 1
Cut the bread into bite size pieces and set aside.
Step 2
In a bowl, whisk together the eggs and sugar until combined.
Step 3
Add the milk and vanilla and keep whisking for another minute.
Step 4
Heat up a skillet or a non stick pan over medium heat and melt the butter in the pan.
Step 5
Dunk the bread pieces a few at a time, into the egg mixture. Make sure to coat all sides.
Step 6
Transfer the bread into the skillet. Flip and cook until all sides are golden brown.
Step 7
Meanwhile, in a small bowl add the dark chocolate and butter. Melt in the microwave or over a double boiler.
Step 8
Top the warm French toast bites with icing sugar. Serve with dulce de leche, melted chocolate and maple syrup. Enjoy!
