Everything spice is one of those relatively new seasoning blends to arrive on the scene but seemingly with accelerated popularity. It, of course, is derived from the spice blend that is used to crust the equally notable everything spiced bagel. When you start using this spice blend, you'll quickly understand why it's translated into seasoning other dishes. Incredibly versatile and can turn everyday egg and toast preparations into culinary feature events. While it's pretty easy to find it in the spice section of grocery stores these days, don't fret if you cannot source it as making it is quite simple (recipe provided below). Everything spice does an honourable job of propping up the real star of this recipe, the asparagus. When in season and procured locally, it's tough to imagine anything better than biting into a tender yet crisp spear of perfectly cooked asparagus. Just imagine for one second now, that same asparagus is served alongside salty, crispy bacon, jammy boiled eggs and a healthy smattering of everything spice. This dish may have breakfast/brunch undertones but make no mistake; it's an excellent side along with any proteins for any meal.

Everything Spice Roasted Asparagus With Bacon and Eggs

Step 1
Prepare the everything spice mix by combining the poppy seeds, white sesame seeds, black sesame seeds, flaky sea salt, dried minced garlic and dried minced onion. Mix until even and set aside. Note: this spice mix can be stored in a cool and dry spot for up to 3 months.
Step 2
Bring a pot of water to a boil and cook eggs to doneness preference (6 minutes for a jammy egg yolk) remove from pot and immediately soak in cold water for 10 minutes. Peel eggs and set aside.
Step 3
While the eggs are cooking, begin cooking the bacon slices until crispy, cut into small bite sized pieces and set aside.
Step 4
Toss the trimmed asparagus in the olive oil , kosher salt and fresh cracked black pepper, broil in the oven on HIGH for approximately 4-5 minutes until the asparagus have softened and browned but are NOT mushy.
Step 5
To assemble: place the broiled asparagus on the bottom of a platter, sprinkle with the crispy bacon bits and then carefully halve the soft boiled eggs and place on top. Sprinkle a generous amount of the everything spice over entire dish and serve immediately.
