Classic Tiramisu

Ingredients

Ladyfingers

  • 3 grams cornstarch

  • 20 grams granulated sugar

  • 2 egg yolks

  • 2 mL vanilla

  • 40 grams granulated sugar

  • 2 egg whites

  • 65 grams cake flour

  • 2 grams baking powder

Cream

  • 400 grams mascarpone cream

  • 50 grams condensed milk

  • 300 mL heavy cream

  • 50 gram granulated sugar

  • 1/4 cup espresso, chilled

  • 2 tablespoons rum

  • Cocoa powder, to serve

6 Steps

  • Step 1

    Beat egg whites with 40 grams sugar until soft peaks form.

  • Step 2

    Mix the yolks with vanilla and 20 grams sugar until the mixture is light yellow.

  • Step 3

    Fold ⅓ of the egg white mixture into the yolk mixture, then pour this mixture back into the remaining bowl of whites and fold them evenly.

  • Step 4

    Sift the baking powder and cake flour until the mixture is thick and soft.

  • Step 5

    Fold the mixture gently. Add mix to piping bags and pipe into 4-inch long logs on a baking sheet lined with parchment paper. Sprinkle the surface with a layer of granulated sugar.

  • Step 6

    Preheat oven to 320°F. Bake Ladyfingers for 10-15 minutes and then lower oven to 175°F and bake for 60 minutes until crisp. Remove from oven and let cool.

Classic Tiramisu

  • Step 1

    Mix soft mascarpone with condensed milk.

  • Step 2

    In another bowl, beat sugar with cream and then mix the 2 mixtures together.

  • Step 3

    Mix in coffee and rum. Place the cake on a tray, alternately arrange 1 layer of cake, 1 layer of cream and leave the cake tray in the refrigerator for at least 4 hours or overnight to make the cake more delicious.

  • Step 4

    Cover with a thin layer of cocoa powder before enjoying.
