Chicken Parm Sandwich

Chicken Parmesan is a classic Italian dish. Serving it as a sandwich not only makes it ten times better, but also makes it more casual. To make a perfectly crispy chicken cutlet, I'm using panko. You can use a regular one or the Italian seasoned for extra flavour. The store-bought marinara sauce used here is to save you some prep time but feel free to make your own marinara sauce. The whole process is straightforward and the sandwich comes together in less than 30 minutes. You can use any type of sandwich bread that you want; just toast them for a few minutes for extra crispiness.

Step 1
Slice chicken breasts in half horizontally, to make a cutlet.
Step 2
Cover the chicken with plastic wrap and use a rolling pin or meat tenderizer to pound chicken cutlet until roughly ½-inch thick.
Step 3
Season the chicken with salt and pepper.
Step 4
Place the flour and breadcrumbs into 2 separate plates.
Step 5
Crack the egg in a third plate and whisk it with a fork.
Step 6
Dredge chicken cutlet first in flour, coating both sides of the cutlet. Then dip cutlet in egg, coating each side evenly. After that coat the cutlet in breadcrumbs and shake off any excess.
Step 7
In a cast iron skillet over medium-high heat, heat enough oil for frying.
Step 8
Fry the cutlet for 2 to 3 minutes on each side or until chicken is cooked and golden brown.
Step 9
Slice the bread in half and place both sides on a tray. Place the chicken cutlet on the bread. Spoon the marinara sauce on top of the cutlet and top with mozzarella.
Step 10
Place the tray under a broiler until cheese has melted.
Step 11
Top with Parmesan and close the sandwich with the other slice of the bread.
