Buttermilk Biscuits with Aged Cheddar and Chives

Nothing quite compares to a buttery biscuit when it comes to comfort food. Whether you're eating them for breakfast, with afternoon tea or as a side at dinner -- there really are no restrictions when it comes to indulging in the crumbly treat. With the addition of aged cheddar and chives, this biscuit takes your traditional buttermilk rendition to the next step. Make sure you keep your butter and buttermilk cold and don't overwork your dough -- you want a tender biscuit not a rock hard one!

Buttermilk Biscuits with Aged Cheddar and Chives

Step 1
Add flour, baking powder, baking soda, sugar and salt to a food processor. Pulse until evenly distributed.
Step 2
Add cubed, cold butter to food processor. Pulse until coarse crumbs achieved.
Step 3
Transfer mixture to a large bowl, slowly drizzle in 1 cup cold buttermilk. Add grated aged cheddar and sliced chives. Mix until combined with a wooden spoon.
Step 4
Turn out onto lightly floured surface. Pat down into 1"-inch thick square. Cut into 4 pieces, stack on top of one another and with a rolling pin, roll out into a 1"-inch thick rectangle.
Step 5
Preheat oven to 400°F.
Step 6
Cut rectangle into 8 square pieces. Line a baking sheet with parchment paper, place biscuits onto sheet spaced out from one another. Freeze for 10 minutes.
Step 7
Brush with melted butter and sprinkle with Maldon salt.
Step 8
Place baking sheet into oven and bake for 25 minutes or until biscuits are golden brown on top.
